What is a Muscovy Duck?
Muscovy ducks are a unique and rewarding addition to any farmstead—or a flavorful choice for the dinner table. Unlike most domestic ducks, Muscovies are not descended from Mallards, and they differ in both temperament and taste. They are excellent flyers and prefer to perch at night. They are also quiet birds making them ideal for farms where noise may be a concern.
While free-ranging, our Muscovies have proven to be outstanding foragers. They’re highly active and will happily clean up weeds, grasses, insects, and even small pests like mice, contributing to a healthier farm.
What does their meat & eggs taste like?
Muscovy meat is lean, deep red in color, and has a rich, almost beef-like flavor—far less gamey than traditional duck breeds like Mallard. Many chefs and home cooks appreciate Muscovy for its versatility, offering a gourmet poultry option that bridges the gap between duck and red meat. Full-grown drakes can reach impressive weights of up to 15 pounds, while hens typically weigh around 6 to 8 pounds.
Muscovy eggs are another farm treasure. Larger than typical duck eggs, they have strong, durable shells that range from cream to light tan. Inside, you’ll find a rich, golden-orange yolk that’s packed with flavor. These eggs are wonderful for baking, thanks to their higher fat content, but they’re equally delicious scrambled, fried, or folded into a farm-fresh omelet.
